2 tbsp. oil (vegetable or olive oil)
1/4 medium onion, finely chopped
1/2 red bell pepper, finely chopped
2 c. long grain white rice
2 c. low-sodium chicken broth1 c. tomato sauce
1 c. water
1 tsp. garlic powder
1/2 tsp. ground cumin
Kosher salt
Freshly ground black pepper
½ lb of shrimp – (depending on your taste and desire you can add more or less)
Freshly chopped cilantro, for garnish
Frozen peas & carrots, corn are optional
