garlic potato cheese tacos

Directions:

First peel and put your potatoes in cold water and salt, then boil til tender, about 20 min. Put them in a mixing bowl, add garlic, milk and butter and mix. I like mine a little lumpy. Then add the cheese and mix in in. Put aside. Warm your tortillas in the microwave on 30 sec intervals so they are pliable and wont crack. Put a couple spoonfuls of the potatoes in them and fold. I used flour with water, to make a paste and put it on the inside edges of the tacos to hold them shut. My recipe made 12 tacos. Put the oil in a pan and heat. Then when hot enough fry tacos to golden brown. Flip over to get both sides crispy and golden. As they are done lay them on a paper towel to soak extra oil off. Then garnish with whatever you like! I made my green avacado salsa and the cebollita especially for this dinner. I posted that recipe yesterday.
