6 large (burrito size) flour tortillas

3 cups cooked, shredded chicken

2 tablespoons oil, plus more for frying

1/2 cup diced yellow onion

2 cloves garlic, minced

1 can Rotel – I used original

1 tablespoon chili powder

1 tablespoon cumin

1 tablespoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon cayenne pepper (optional)

1/2 cup chicken broth

8 ounces shredded cheese – I used a Mexican blend

2 tablespoons cilantro, minced
